"Ghee (pronounced "gui") is the Indian name for clarified butter. It is widely used in Indian cooking and is said to provide many nutrients such as omega 3 and 9, saturated and unsaturated fatty acids, vitamins A, D, E and K, linoleic acid, antioxidants and minerals.
Ayurveda recommends Ghee for its multiple benefits, associated or not with plants. It is also one of the 3 essential regenerants (rasayana) with Honey and Milk. It is particularly renowned for lubricating the body in cases of constipation and giving the accompanying oilseeds regenerating properties for the body. For Ayurvedic medicine, cooking with Ghee promotes digestion, the smooth running of menstruation, and improves the well-being of pregnant women. Consuming Ghee would also help prevent skin dryness during cold periods.
There are many preparations with Ghee in Ayurvedic medicine, for example with ginger to obtain a consistent paste, reputed to be very effective in stimulating digestion.
It is also mixed with Shatavari powder, a plant well known for toning the female body. This preparation would also be recommended to soften the tendons.
In case of joint problems it is recommended to cook Ghee with spices which pacify Vata, in particular those which make up Trikatu: ginger, black pepper, long pepper and also cinnamon or cumin.
Ghee with Triphala would make a general tonic, especially recommended as an eye restorative.
Turmeric powder added to Ghee is the basis of Indian cuisine, it is an excellent preparation for following a nutritious diet, or even in cases of anemia. It could also be used as a poultice on a sprain.
Ayurveda also advocates the consumption of Ghee with Centella or Brahmi powder to soothe psychological agitations, particularly in people with a Vata or Pitta constitution.
Spiritually speaking, clarified butter also has a very important place for Hindu religions, who consider it as an offering, burned in the form of a candle or specific lamps. It is said that when it burns, staring at the flame could improve eyesight or concentration.
